In-vivo measurements by the APCI MS-nose method allowed temporal sensory evaluation and flavour release data to be directly correlated, but several limitations have frequently been reported. Impact on flavour release of the structure of composite gels containing polysaccharides: Example of the fruit préparations

The main objective of this study was to understand the respective rôle of the structure of a food product and of the physicochemical interactions on flavour release. For that purpose, fruit préparations hâve been chosen as model matrices. Those matrices contain a polysaccharide as gelling agent, a cross-linked waxy corn starch (1.4%), a high sucrose content (35%), an acidic buffer and a strawberry aroma (17 molécules). Among the food proteins, β-lactoglobulin is the most extensively studied for its binding properties, which involve both hydrophobic and hydrogen binding. Chewing simulation: a way to understand the relationships between mastication, food breakdown and flavour release

International audience; Understanding in-mouth mechanisms is necessary to understand flavour release and perception phenomena. To overcome the limitations of in-vivo flavour release measurements, we developed a chewing simulator that faithfully reproduced many mouth functions. Using brittle foods, we showed that in-vitro food breakdown was very comparable to that obtained in-vivo. We also studied on model cheeses in-vitro flavour release by connecting on-line the chewing simulator to APCI-MS. Preliminary results are discussed.

Influence of flavour transfer between different gel phases on perceived aroma

International audience; Multiphasic models of stirred fruit yoghurts made from a bilayer that consisted of a pectin and a dairy gel were developed in order to study the transfer of strawberry flavour compounds between the two phases. Several parameters (i.e., the flavour concentration, the fat content of the dairy gel and the storage temperature) affecting flavour compound transfer, using an experimental design, together with their effect on sensory perception were investigated.
